Colorado has always been an amazing hotspot for the fusion of food cultures, including Mexican and Latin American cuisines. In recent years, birria tacos have become increasingly popular on food trucks and restaurants as endless boomerang videos of taco immersion hit social media. While there aren’t many spots in Colorado that offer Birria Tacos, the few institutions that do it do it well.
La Unica Birria De Res

The lowdown: La Unica Birria De Res is a food truck that focuses on Tijuana-style beef birria, similar to a meat stew that can be served on its own or as a taco filling. This food truck was founded in 2016 and offers not only tacos, but also quesabirrias, burritos, tortas and consommé. Tacos El Rey De Sel
Where: 15200 E. Colfax Ave., Aurora
The lowdown: This family-run restaurant is the self-proclaimed Birria specialist and food truck in Denver. Not only does this truck offer birria tacos, but it adds the braised meat to virtually any dish, including nachos, fries, noodles, burritos, and tortas. In addition to the menu with a focus on Birria, you will find Agua Frescas and Conchas Locas – Mexican pastries filled with strawberries and Nutella. La Calle Taqueria and Carnitas
Where: 1565 W. Alameda Ave., Denver
The lowdown: La Calle Taqueria Y Carnitas is located in the Valverde district and has a variety of tacos with Carnitas, Al Pastor, Chorizo and much more. While these tacos stand on their own, the menu also includes a delightful dipping soup in two forms – Birria de Chivo – goat meat and barbacoa y consommé. The lowdown: In Las Esquina Del Sabor or the “Taste Corner”, authentic and well-processed Latin American food thrives in Aurora. There are various food trucks on the property that offer tacos birria, long machete tacos, tortas, burritos, nachos and chocolate flan. Panchos Birria Y Mas
Where: 6401 W. Alameda Ave., Lakewood
The lowdown: Panchos Birria Y Mas is another food stand in the greater Denver area that focuses on delicious Birria tacos from a bright red truck. While most spots are experimenting with different methods of incorporating Birria into main dishes like ramen and burritos, Pancho’s Birria Y Mas is pushing the envelope with a new Birria sub sandwich and a side of the broth to dip – an idea that the French dip resembles. Kike’s red tacos

The lowdown: While birria is almost as popular as avocado toast, the menu at Kike’s Red Tacos uses this tender meat in a variety of ways, from tacos and burritos to quesatacos and tortas. While the traditional tacos are tossed out of the park, there is something about the cheesiness of the Birria Quesadilla that sets this food truck apart from the rest. The lowdown: This food truck, similar to the others, has a long list of birria-filled dishes, from tacos and ramen to a one-of-a-kind birria pizza – filled with extra cheese and steamed meat between layers of a crispy tortilla.
